    hat is a Shrub?
    The American version of the shrub has its origins in 17th century England where vinegar was used as an alternative to citrus juices in the preservation of berries and other fruits for the off-season. By the 19th century, typical American recipes for shrubs used vinegar poured over fruit—traditionally berries—which was left to infuse anywhere for several days; afterwards, the fruit would be strained out and the remaining liquid would be mixed with a sweetener such as sugar. The sweet-and-sour syrup could be mixed with either water or soda water and served as a soft drink, or as a mixer in alcoholic cocktails.

    1/2 oz lemon juice
    1/4 oz agave

    This is one of our most popular featured drinks: the Midnight Smoke. Crafted during an epic cocktail-athon that will be sung about years to come, this libation will surely convince you that you need more shrubs in your life.
    Add the mexcal, blueberry lemon drinking vinegar, lemon juice, and agave to a mixing tin with a handful of ice then shake until the tin frosts over. Toss in an egg white if you feel adventurous and love cocktails with body and give it another good shake. Pour into a champagne flute to look really classy or a coupe glass for that extra sense of mystery. Then just enjoy it.

    2 oz blanco tequila
    1/2 oz lime juice
    1/2 oz Cointreau
    3 ripe strawberries, lime wedge, kosher salt
    Here is the best spin on a margarita you will ever enjoy… especially on these warm summer days.
    If you enjoy salted-glass margaritas (and even if you don’t, give it a try just one more time), rim the top of a glass with lime juice then press into a layer of kosher salt on a plate. Puree the ripe strawberries and combine with the tequila, drinking vinegar, lime juice, and triple sec in a mixing tin half filled with ice. Shake like your life depended on it for 20 seconds (because this drink is so worth it) and pour into the salted glass.

    1 oz Horball’s Peach Rosemary Drinking Vinegar
    4 oz prosecco
    1 crushed peach
    Puree a very ripe fresh or frozen peeled and pitted white peach until smooth, then add about 1 ounce to the bottom of a champagne flute. Follow the puree with the peach rosemary drinking vinegar, then add prosecco. Swirl the flute to get an interesting mixing effect while adding the bubbly.
    We love bubbly drinks using the peachy rosemary drinking vinegar… but all of the flavors go quite well with bubbles. Experiment and let us know what you find out.
